Aubergine caviar with tomatoes
- 4 aubergines
- 3 tomatoes
- 1 onion
- 2 cloves garlic
- 1 Tbsp vegetable oil
- salt and pepper to taste
Wash the aubergines, cut them in half, place them on a baking tray greased with vegetable oil and bake in the oven until soft. Then remove the flesh from the baked aubergines and add salt and pepper to taste. Put the aubergine caviar on a plate and decorate with the onion ringlets and tomatoes.
