Potato Salad with Nuts |
- 8-10 potatoes
- 2 spring onions
- a glass of walnut kernels
- 2-4 cloves garlic
- 1 tablespoon cider vinegar
- dill or parsley
- salt and pepper to taste
Boil the potato in its skin, peel, and cut into cubes. Crush the walnuts with the salt and pepper and add the cider vinegar and the chopped spring onion. Mix with the diced potato and sprinkle the herbs over the top.

Healing Potato: Good Potato |
| ‘That’s an amazing story!’ cried Toby. ‘I didn’t know that potatoes came here from
South America.’
‘I am now grown everywhere and people call me the ‘second bread’, but I had to
fight hard to gain people’s trust! The Indians have known about me for one and a half
thousand years, but I only came to Europe in the sixteenth century. To begin with,
people fried my poisonous green berries in oil and cultivated them to get potato
tubers. Of course, my five-pointed star-like white and lilac flowers are nice, but I
didn’t appear on the earth just to look pretty!’
‘Now I’ll always think of that legend when I’m peeling you,’ Toby said.
‘Just make sure you don’t peel a thick layer from me,’ the potato said. ‘All my
most valuable properties – vitamin C, potassium, calcium, iron, iodine and many more
– are located in my skin, and in a millimetre layer beneath it. I almost cry when
people throw out my most valuable part.’
‘Oh little potato, forgive me,’ Toby said. ‘I always used to cut off a thick skin so I
could finish peeling you more quickly.’
‘You don’t actually need to peel me at all, you can simply bake me in the oven,’
the potato said. ‘That’s the best way of preserving my vitamins.’
‘So does that mean we end up eating potatoes which are not good for us at all?’ the
boy asked sadly.
‘There’s always something good left behind,’ the potato said comfortingly. ‘The
tubers themselves contain edible starch, protein substances and carotene. It’s just
easier to preserve them in a baked potato.’
